Checking Malolactic Fermentation

We have been checking our 2011 barrels for their progress in Malolactic Fermentation...or "malo" as we winemakers like to call it. MLF is an important winemaking process usually conducted on most red wine grapes and some whites. 

Malolactic fermentation converts harsh malic acid to softer lactic acid, giving the wines part of their amazing supple characteristics.

After checking the results, it looks like malic fermentation is still underway. We will check again in a few weeks.

This also gave us a chance to taste and look at the color of the wine.  We couldn't be happier with the developing flavors and the color is spot on.
